Za'atar chicken, (pronounced saatir), is an Arabic herb, which transforms the most average of meat dishes, into something wonderful. Served in jar, in makes a more exciting lunchtime option, that rather plain sandwiches. With a bright green and purple carrot salad, this is a wonderful, colourful dish, made for kids who are partial to a little colour in their meals.

Makes: 3 servings
Ingredients
6 pieces of chicken
6 kale leaves
2 heirloom tomatoes
2 baby yellow peppers
Tsp za'atar seasoning
Glug of olive oil
3 purple carrots
Tsp black pepper
Method
Place the chicken in a large pyrex dish, add the seasoning and oil and cook for 30 minutes in the oven.
Wash the vegetables and chop
Remove the chicken from the oven and add the peppers.
Chop the tomatoes into chunks.
Add the kale, carrot and tomatoes to a jar and drizzle with oil.
Remove the chicken dish from the oven.
Add the chicken and peppers to the jar and enjoy.
