I first tried vegetarian sausage rolls at a specialty bakery whilst travelling up the north coast of Australia and they were amazing. The only thing that I forgot to include in this recipe is corn, which is optional. You can use any vegetable ingredient that can be made 'mushy'; from pumpkin to zucchini, to sweet potato. The curry powder and puff pastry makes this dish tasty and the flavor is just right. These sausage rolls are not overwhelming, but are made with gentle, whole ingredients that are a perfect appetizer or a finger food to serve at your party.
