Vegetarian Mushroom Foie Gras Sandwich with Medley Tomato & Avocado

This is a healthy deluxe vegetarian sandwich filled with gourmet salad, medley tomato, mushroom and avocado.

This is a wonderful decadent sandwich. A great snack to have at anytime. It's got Princess P's tick of approval :D

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 2 servings



Ingredients
4 slices of sourdough bread
1 avocado
100g gourmet salad
50g medley tomato
50g button mushroom
30g shaved parmesan cheese
1 tablespoon extra virgin olive oil
1 tablespoon of vegetarian mushroom foie gras pate
Sea salt and black pepper

Method
Prior to assemble the sandwich, drizzle some olive oil on the sourdough.



Generously spread the vegetarian foie gras spread on the sandwich.
Then top with mushroom slices.



Add the medley tomatoes.
Sprinkle shaved parmesan cheese on top.



Place the sandwich in a toaster-grilll.
Grill until the sourdough is golden and toasty.



Add a handful of gourmet salad on top.



Season with salt and pepper.
Garnish with parmesan cheese.



Lastly, scoop 1/2 of avocado on top.



Slice the sandwich in half.
Serve immediately.



A healthy delicious vegetarian sandwich!~
