Vegetable Pizza Cups

Saturday is our pizza day. We usually have homemade pizza for dinner every Saturday. I think cups are easier than the sliced pizzas (easy cleaning and eating).

Preparation Time: 4 hours
Cooking Time: 25 minutes
Makes: 6 servings

Ingredients
For pizza cups
3 cups plain flour
1 tsp active dry yeast
1/4 tsp sugar
1 cup water
3 tbsp olive oil
Salt to taste

For topping
1 tbsp olive oil
1 cup grated mozzarella cheese
1 tomato
1/4 cup chopped spring (green) onion
1/4 cup chopped cucumber
1/4 cup chopped onion
1/4 cup chopped capsicum (bell pepper)
3 olives chopped
1/2 tsp salt
1 tsp garlic paste
1/4 tsp mustard sauce
1 tbsp pizza sauce
1/2 tsp dried parsley
1/4 tsp dried oregano

Method
Proof the yeast. Take yeast and sugar in a bowl. Add lukewarm water to it. Let it sit for 15 minutes. Bubbly foam will start to appear on the surface after few minutes.

Then add water and olive oil to the yeast proof and mix well to distribute the yeast. Add the flour and salt to this and mix well with a spatula or spoon. Then knead well to form a soft dough.

Let it sit for 3 to 4 hours. The dough should double in size.


Let the dough double in size.

Meanwhile chop the vegetables. In a bowl mix the chopped vegetables and salt. Let it sit for 30 minutes. This helps to remove excess water from the vegetables.

Heat olive oil in a pan over low flame. Squeeze excess water from the vegetables and add to the olive oil. Add the dried oregano and parsley into it. Mix well and cook on medium high heat for 5 minutes. Remove from heat and keep it aside.

Now mix the pizza sauce, mustard sauce and garlic paste in a bowl. This makes it easier to brush the pizza cups with sauce.

After the dough had doubled in size, punch it down and knead again.

Preheat the oven to 200 C/ 400 F.

Grease the muffin pan with olive oil. Make medium size balls from the dough. Press the balls into the pan to form a cup shape. Brush with olive oil.

Then brush the cups with the sauce. Add a little of the cheese into the cups.

Then fill the cups with cooked vegetables and top with cheese.

Bake for 15 minutes in the oven.

Remove from the pan and place on a rack to cool.

The Pizza cups are ready. Serve warm.
