A delicious vegetable feast that takes the boring old mince Bolognese to a new level.
This vegetable-packed Bolognese sauce is so jam packed with goodness, you would be getting more than enough veggies in just one serving. There are 6 or more servings of vegetables in this dish which makes it super wholesome. You can hide the vegetables in the sauce and the kids won't even know.
Serve it up with pasta or gnocchi or even in wraps. This dish is versatile and very healthy. It can be frozen and will keep for days in the fridge.

Ingredients
5 carrots
1 red onion
3 shallots
1 large zucchini
1.5litre of tomato purée
2 tablespoons of dried vegetable stock
Pasta
Fresh herbs (basil, oregano, thyme, parsley)
Method
Prepare the fresh vegetables.
Blend all the vegetables in a food processor.
Fry up the vegetables on olive oil.
Add some bacon (this is an optional ingredient).
Add tomato purée and stir together.
Cook and drain the pasta.
