This vegan carob almond fudge has been slightly adapted from the wonderful vegan blog Oh She Glows. It is the perfect treat for those looking to watch their sugar intake and tastes almost as good as chocolate! Despite having no refined sugars and containing natural ingredients, this fudge tastes really sweet and the rice bubbles give it a great texture. Even better is the fact that it takes 10 minutes to whip up! Just mix all the ingredients together in a bowl and pour in to a tin. Easy and delicious.
Ingredients 1/2 cup of virgin coconut oil, melted
1/4 cup of natural almond butter
1/2 cup of gluten-free rice bubbles (found at the supermarket)
1/4 cup of carob powder (found at health stores), sifted
1 Tbsp of cocoa powder, sifted
2-3 Tbsps of rice malt syrup (or other sweetener)
1 Tsp of vanilla extract
pinch of salt
Line a small loaf tin with baking paper.
In a mixing bowl, add all ingredients and mix together until combined.
Pour in to prepared tin and put in the freezer until set.
Cut up in to squares to serve.
