Vanilla Scones

Beautiful soft and fluffy scones with the sweetness of added vanilla. The perfect afternoon treat with jam and cream!

Preparation Time: 30 minutes
Cooking Time: 15 minutes
Makes: 12-15 servings

Ingredients

4 cups self-raising flour
Pinch of salt
1 Tbsp caster sugar
1 cup thickened cream
1 cup milk (I used skinny)
2 tsp vanilla essence
Icing sugar to serve

Method
Preheat oven to 190 c and line a baking tray baking paper.
Sift flour, salt and sugar in to a large bowl.
In a separate bowl, combine cream, milk and vanilla. Mix well and add to dry ingredients.
Using a flat-bladed knife, stir the mixture until it resembles a dough. Turn out on to lightly floured surface and knead gently for 2-3 minutes until mixture is smooth.



Pat dough out until it is roughly 2.5cm thick. Using a cookie/scone cutter or even the rim of a drinking glass, cut scone shapes from dough. Re-roll the remaining dough and repeat process.



Place scones on tray and bake for 12-15mins or until lightly golden. Remove from oven and leave to cool for 10minutes, covered with a clean tea-towel.
Serve with your favourite jam and a dollop of cream!!
