Vanilla Cupcake

Vanilla cupcakes are a plain and easy treat to create that even the most fussy taste buds can enjoy, so they work well as a treat to take to a friend's party! Leave them without icing, or top with your favourite colour or flavour of icing for added fun. Get the whole family involved in creating these lovely treats.

Preparation Time: 15-20 minutes
Cooking Time: 15 minutes
Makes: 24


To make vanilla cupcakes:
200g of butter
1 3/4 cups caster sugar
2 teaspoons vanilla essence
4 eggs
3 cups of self raising flour
1 cup milk

To make butter frosting:
200g of butter
6 cups of icing sugar
1/2 cup milk

Preheat the oven to 180 degrees C. Line a cupcake baking tray with patty pans.

Place the butter, caster sugar and vanilla essence into a mixing bowl. Beat with an electric mixer until combined and creamy.

Gradually add the eggs and beat these through the butter mixture until well combined and glossy.

Alternate between adding some flour and some milk, stirring to combine after each addition until all of the flour and milk has been added.

Spoon the cupcake mixture evenly into each patty pan.

Bake for 15-20 minutes, until the cupcakes become light golden brown or cooked when tested with a skewer.

Once cooked, allow the cupcakes to set for about 1 minute then carefully lift each out of the baking tray and allow to cool on a wire rack.

To make butter icing. Place the butter in a mixing bowl and chop it into smaller chunks to help soften it before beating it.

Use an electric mixer to beat the butter until it becomes pale.

Gradually add the icing sugar while mixing to combine.

Add the milk and continue to beat the icing until well combined.

Onto cooled cupcakes, either pipe the icing of use a knife to spread the icing on top of each.

Allow to set for at least 1 hour.
