I love a simple salad. This looks complicated, but it isn't. It's just well-put together, which as any mother will tell you) is the secret to any dish which contains vegetables! Happy munching.
Preparation Time: 10 minutes
Makes: 5 servings
Ingredients
4 carrots
2 salad tomatoes
8 baby plum tomatoes
6 cavolo nero (black kale) leaves
Handful curly kale
3 Tblsp olive oil
Half tsp crushed black pepper
Handful fresh basil
Handful fresh rosemary
Avocado

Method
Wash and tear the cavolo nero and place in a salad bowl.
Peel/shred two of the carrots on top of the cavolo nero.
Roughly slice the tomatoes and add on top of the carrots, garnishing with the basil.
Peel the third carrot on top of the tomatoes.
Add the black pepper, oil and the curly kale.
Slice the baby plum tomatoes in half and add to the bowl.
Add the avocado, scooped out from the skin, to the bowl
Serve and enjoy.
