Imagine your favourite breakfast foods cozily tucked inside a soft loaf of basil herbed focaccia bread. Throw in some golden hash rosti, sizzling bacon, decadent duck pate, some baby green spinach, fun popping pea, roasted red capsicum and you have one epic sandwich!
(My pre-made hash rosti already contains: eggs, hash brown, bacon, pea, chickpeas and red capsicums)
Alternatively, you can grill plain hash browns, red capsicum and bacon in the oven.
Slice the herb focaccia bread in half.
Place the hash rosti/hash brown at the bottom.
Top with red capsicums, egg, green peas and bacon stripes.
Garnish with fresh baby spinach leaves.
Liberally spread duck pate on the underside of the top focaccia bread.
Cover to complete the sandwich
Warm up your toastie and place this ultimate sandwich in the sandwich presser for 3 minutes or until you get the crispy crunchy edges around the focaccia.
Cut in half and it is now ready to be served.
Once your kitchen begins to fill with the scent of potato and sizzling bacon, people will congregate towards you. The combination of potato, bacon, duck pate really makes this the perfect comfort sandwich. I am feeling pretty proud of this ingenious concoction :)
