The wonder of this recipe is that I only need one banana and one egg, and if you double ingredients you can enjoy a batch of twelve (much to my sister and nieces delight). No fancy gadgets are required, just a fork, a frying pan, and hungry mouths!

Makes:6 pancakes
Ingredients
1 large (free range) egg
1 ripe banana

Peel the banana and mash in a bowl.
Crack the egg into the bowl.
Combine to form a batter, but don't worry if it's still a bit lumpy.
Add a little oil to a hot frying pan and pour in no more than 2 tblsp's worth of batter.
Fry for 2 minutes either side.
Season the pancakes with cinnamon, nutmeg, a little salt if you like, but they are wonderful without seasoning. High in protein and fibre they're the perfect post-gym snack, guilt-free treat, or balanced breakfast for kids. With a serving of fruit on the side you've got a winner.
These go down a treat after school time, whilst you're preparing dinner.
