Turkey bites with herb and lemon gravy
This is a perfect mid-week meal and makes use of the cheaper cuts of turkey, which are delicious, filling, and can feed a whole family.

: 2 servings
400g diced turkey thigh
6 kale leaves
Half a lemon
Handful of fresh thyme
5 basil leaves
Half tsp ground black pepper
Add all of the seasoning to the meat and allow to marinate overnight.
Add the turkey to a frying pan and cook over a high heat for 5 minutes to seal the meat.
Once the turkey has turned white turn to a simmering heat.
Add a pint of water to the pan and leave to reduce for 25 minutes of a medium heat.
Grate over the lemon rind.
Return to the pan - the turkey should have soaked up most of the water and become tender.
Transfer the turkey to a bowl.
Add the kale to the pan whilst its still hot, move the kale around the pan for 2 minutes so it wilts.
It will soak up any remaining juices and become tender.
Add the kale to the bowl of turkey.
Add the butter along with 200ml of water to the frying pan and heat for one minute. Pour the gravy-like sauce over the bowl.
Split this between two dishes and serve.
