A tasty addition to any lunch box, these tuna patties can be eaten on their own, in a wrap, or as a side to lunch.

Makes: 12 servings
Ingredients
2 potatoes
200g tinned tuna
1 carrot
200g tinned corn kernels
200g tinned mixed beans
1 egg
Bread crumbs
Method
Peel and chop the potatoes, then steam them until soft.
Chop or grate the carrot, drain the corn kernels and drain then flake the tuna. Combine these in a mixing bowl.
Drain the beans and pat them dry, then add these to the mixing bowl and combine.
Lightly beat the egg, then stir the egg through the carrot and tuna mixture.
Use a fork to mash the potatoes, then add these into the tuna mixture.
Press balls of tuna mixture into pattie shapes. Roll each pattie in breadcrumbs.
Cook over medium heat, then flip each pattie over and cook until ready.
