A fresh wrap around a succulent tuna pattie, this will fill any lunch box as a healthy, delicious, and power-packed wrap!

Makes: 2 servings
Ingredients
2 potatoes
200g tinned tuna
1 carrot
200g tinned corn kernels
200g tinned mixed beans
1 egg
Bread crumbs
2 wraps
2 teaspoons sweet chilli sauce
4 iceberg lettuce leaves
4 slices of tasty cheese
1/4 of a cucumber
1/2 of an avocado
Method
Peel, chop and steam the potatoes until soft. Once cooked, set these aside to cool slightly, then place the potato chunks into a bowl and mash them with a fork.
Into a separate mixing bowl, flake the tuna with a fork. Drain the corn kernels and beans and add these to the tuna. Grate or finely chop the carrot and also add these pieces to the tuna. Mix well.
Add the potato and stir to combine.
Lightly beat the egg, then stir it through the tuna mixture.
Use your hands for form disc shaped patties, pressing the ingredients together firmly. Roll each pattie in bread crumbs and set them aside, ready to cook.
Cook the patties over a medium heat until they are brown on both sides. Once coked, remove the patties from the heat and set them aside while you prepare the rest of the wrap.
Spread a layer of sweet chilli sauce over a wrap and top this with a layer of cheese.
Mash the avocado and spread this over the wrap as well. Top with lettuce and sliced cucumber.
Place 2 tuna patties in the wrap.
And wrap! Fold the bottom up, then roll from one side to the other.
