A fresh, healthy wrap for lunch or a lunch box. Brighten up a lunch box with this simple and easy wrap!

Makes: 2 servings
Ingredients 2 wholemeal or multigrain wraps
1/2 an avocado
180g can of tuna in springwater
1 tablespoon of whole-egg mayonnaise
2 iceberg lettuce leaves
125g tin of corn kernels
(optional - half a cucumber)
Drain the corn kernels and the tuna. Pour the corn kernels into a mixing bowl, then flake the tuna over the top. Add the mayonnaise and stir through to evenly coat the corn and tuna. Set this aside.
Peel and slice the avocado. While the avocado is still on the chopping board, use a fork to mash it up.
Lay each wrap out flat on a clean bench top. Spread the mashed avocado over one quarter of each wrap.
Place a lettuce leaf on top of each wrap, then fill the leaves with a layer of the tuna/corn/mayonnaise mixture.
Grate the carrot and spread a layer over the tuna mixture on each wrap.
If you are including cucumber in the wrap, place some thin slices on top of the carrot.
Top with grated cheese.
Fold the bottom of each wrap up over the filling to form the base of each. Then fold the long side over the filling and roll firmly.
Place each wrap in an airtight container, snap lock bag, or wrap each in cling wrap to pack into a lunch box.
