Mini pizzas are a fantastic family lunch item - they can be made with so many different toppings for everyone to enjoy! Make a batch in advance to pop in a school lunch box. Or spread out a bunch of ingredients across the kitchen bench at lunchtime and let everyone design their own pizzas.

Makes: 1 muffin, but is easy to scale up to however many serves are required!
1 english muffin
2 teaspoons of sweet chilli sauce
2 slices of capsicum
1 slice of ham
2 slices of pineapple
2 slices of cheese (any kind!)
Split the muffin into its two halves. Place each half in the toaster to toast until light golden brown. Toasting the muffins will give you a nice, crispy base on which to make your pizzas.
Remove the muffin halves from the toaster. On each half, add a teaspoon of sweet chilli sauce and use a spoon to spread the sweet chilli sauce out over each muffin.
Place the muffin halves on a bakng tray covered with foil.
Slice two slices of capsicum and roughly chop these into smaller pieces. Whole or half circles of capsicum work well, too, but the smaller pieces can sometimes be easier to bite into! Layer the capsicum on top of the sweet chilli sauce.
Roughly slice a slice of ham as well, and place the pieces on top of the layered capsicum. Shredded ham also works really well here, so would slices of bacon or pieces of salami.
Chop the pineapple slices into smaller pieces. If using tinned or pre cut pineapple pieces, chop each piece in half again to make smaller pineapple chunks which will fit more easily on top of the muffin.
Take two slices of your favourite cheese and place a slice on top of each muffin half.
Heat the grill of an oven or stovetop. Place the baking tray with the muffins in it under the grill for about 5-10 minutes, or until the cheese melts through to coat the pizza goodies beneath!
