Ingredients 1 ¼ cup plain flour
¼ cup self-raising flour
½ cup cocoa powder
1 cup brown sugar
200g dark chocolate, chopped
120g unsalted butter, cubed
2 eggs, lightly whisked
½ cup milk chocolate bits
½ cup white chocolate bits
Ice-cream to serve
Preheat oven to 180°C, line a baking tray.
In a large bowl, sift the flours and cocoa powder together.
Add in the sugar.
Make a well in the centre.
Melt the chocolate and butter in a saucepan over simmering water.
Set aside the chocolate mixture to cool. Add in the eggs.
Add the chocolate mixture into the dry ingredients.
Add the choc chips in and combine.
Roll tablespoons of the mixture into small balls. Slightly flatten into 1.5cm thickness.
Place on the tray and bake for 15 to 18 minutes.
Remove from oven and transfer onto a rack.
Turn a cookie upside down and place ice-cream onto it. Sandwich with another cookie.
