Ingredients
2 eggs
5 cherry tomatoes
Half a red onion
3 mushrooms (ideally 3 varieties)
Bit of olive oil
Pinch of black pepper
1/3 of a fresh rosemary sprig
1 garlic clove

Method
Chop the onion, garlic and mushrooms.
Prick your tomatoes and fry lightly in a pan for 2 minutes with the oil. Add the onion, garlic and mushrooms and seasoning.
Crack in the eggs and scramble for 2 minutes. Plate up and serve.
