My younger cousins are so particular about what they eat, but when they're friends visit they're so much more relaxed. I made this dish for my sixteen year old cousin and her friends, who ate this without complaint.
Preparation Time: 5 minutes
Cooking Time: 1 hour
Makes: 3 servings
Ingredients
6 pieces of chicken
Handful of fresh rosemary
3 garlic cloves
Half tsp black pepper
Half a lemon
Handful fresh spinach
Tblsp olive oil
Method
Wash the chicken using the juice of the lemon and place in a pyrex dish.
Crush the garlic cloves using the back of a knife.
Add the rosemary, pepper and garlic to the dish.
Chop the spinach roughly.
Add the spinach to the bowl, toss and marinate for at least 3 hours. Once marinated, place the dish, uncovered in the oven for 1 hour at 150 degrees/gas mark 4.
Serve the chicken in a bowl so the kids can tuck in themselves.
