Too often we throw away scraps, which when put together with a bit of effort, not to mention cheese and seasoning, make a delicious and filling meal time choice.
Preparation Time: 10 minutes

Makes: 4 servings
Ingredients
3 kale leaves
Half a head of cauliflower
2 eggs
Tblsp crumbled feta cheese
Cheddar cheese
Handful of spinach
Cube of grated ginger
2 garlic cloves
3 tblsp oil
1 sweet potato
Pinch black pepper
Method
Smash or crush the garlic.
Peel the sweet potato and chop into chunks.
Repeat with the cauliflower and fennel.
Wash the greens and tear the cheese into chunks.
Boil the sweet potato for 15 minutes in a large saucepan of boiled water. One cooked mash and set aside.
Add the garlic and ginger to a frying pan with the oil. Cook for two minutes over medium heat.
Add the greens, season, and continue to lightly fry.
Add the sweet potato and cook for 5 minutes.
Pour in the whisked eggs.
Add the cheese to the pan and place under the grill for 3 minutes on high.
Serve immediately once cooked.
