Sweet Lime and Lemon Pudding
This is an easy, quick recipe that turns out every time.
It is made in the microwave so only needs about 6 minutes of cooking.
Although it is made with limes and lemons, it is still sweet and is layered on top of shortbread biscuits.

: 8 servings
125 g plain shortbread biscuits
¼ cup sugar
40 g butter
2 eggs, separated
Juice and zest of a lemon and a lime
1/3 cup plain flour
200 g Philadelphia or light Philadelphia cheese
Lay the shortbread biscuits in the bottom of a small dish.
Beat the butter and the sugar, and then mix in the egg yolks, lemon and lime juice.
Add the flour, cream cheese, and zest, and mix well.
Top the biscuits with this lemon mixture.
Beat the egg whites and spread over the lemon mix, leaving a 2 cm border around the edge.
Cook in the microwave for about 6 minutes.
Do NOT overcook
Cut and serve, or add some cream.
Also great to put a small piece in with the children's lunch -the texture is like a moist cake.
