Superfood Surprise

This recipe has a little of everything for an all round great baby meal. Broccoli and sweet potatoes are packed full of super goodness. This recipe also has a mix of protein, carbohydrates and dairy to complement the vitamin packed vegetables. Best of all, it tastes great too.

Frozen cubes of Superfood Surprise

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 4 servings

1 medium potato
1 medium sweet potato
Half a head of broccoli
1/2 onion
1 small chicken breast
50g cheddar cheese
60ml full fat milk
A little oil for frying

Peel and dice the potato and sweet potato. Cutting them into small pieces means they will cook quicker.
Put the potatoes into a pan of water and boil for 15 minutes or until tender.

While the potatoes are boiling, remove the florets from the broccolli and steam for 7 minutes. You can boil them but they will loose more of their vitamins than if you steam them.

Dice the onion and chicken into small pieces and fry in a little oil until the onions are soft and the chicken cooked through and golden.

Mash the sweet and regular potatoes until smooth, adding around 60 ml of milk. You may need more or less depending on the consistency you get.
Using a hand blender, whizz the chicken, onion and broccoli together. For younger children this can be to a purée and as they move to exploring new textures you can leave it chunkier.

Add the chicken and broccolli mix to the potatoes and mix well.
Finely grate the cheddar cheese so that it easily melts.
Sprinkle the cheese over the superfood surprise and mix through until it has melted and is evenly distributed.
If everything is a little too thick at this point, you can just add some more milk until you get the consistency your baby prefers.

I always make several portions so that's there one for dinner and a few more for the freezer so you don't have to cook every night.

If you spoon the mix into ice cube trays and freeze, you can the pop them out into a resealable freezer bag. You can the choose as many cubes as you like to defrost.
