This is a very easy snack. Sweet and fried, though not the healthiest of snacks, it is delicious. It can surely be a once-in-a-while treat.
In India, it is prepared during festivals. They are called
Shakkarpare

Sugary fritters
Preparation Time: 20 minutes
Cooking Time: about 5 minutes for frying each batch
Makes: about 300 grams
Ingredients
1/3 cup ghee OR clarified butter
1/3 cup sugar
1/3 cup water
Around 1/2 cup (or slightly more) all-purpose flour
Oil for frying
A pizza cutter or sharp knife
Lots of paper towels
Method
For the dough
Combine water, ghee and sugar in a small, flat pan (we will be kneading dough in same pan) and allow to boil. Keep mixing. Remove from heat and allow to cool
Once cooled, add flour and mix with fingers. Add as much flour as you can incorporate into the ghee and sugar liquid.
Knead till you get a uniform dough. It should neither be too soft nor too firm.
Rolling and cutting out fritters
Heat oil in a deep wok/pan.
Make balls of the dough and roll it out. Try to keep a uniform thickness of about 3 mm.
Do not use any dusting flour while rolling.
Now with a pizza cutter or knife, cut out square or diamond shapes (vertical and horizontal cuts about 2 cm dimension)
Fry in hot oil. Keep swirling with a ladle for uniform frying. Remove once it turns golden brown. Drain on paper towels.
Make in batches as you roll out each of the dough balls.
Enjoy these sugary fritters, they tend to disappear in no time!
