Peanut butter and jelly is the all-American classic combination. I've made a healthier, sugar and dairy free version of the classic sandwich fillers with a fibrous snack, all kids can enjoy, and even take to school.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 8 servings
Ingredients
50g oats
3 Tbslp peanut butter
2 Tblsp honey
2 Tblsp coconut oil
Half a vanilla pod
1 Egg
Method
Grease a loaf tin with coconut oil and add greaseproof paper.
Add all of the ingredients to a bowl, save the egg.
Pour into the loaf tin and place in the oven for 20 minutes at 175 degrees/gas mark 4.
Turn the 'cake' out on to a cold plate immediately.
Slice into bars of equal size.
Drizzle the jam and peanut butter down the middle of the bars and serve.
