My sister is currently studying at University, and having visited her recently I have to say student-cooking is not to be scoffed at. We enjoyed a feast of a meal, with chicken as the main, and all the side dishes I love.
I've recreated my sister's student-style roast chicken, I say student-style because she used the whole of the bird, and I am a fan of zero-waste living.
Preparation Time: 10 minutes
Cooking Time: 2 hours 10 minutes
Makes: 5 servings
Ingredients
1 medium sized chicken
Half a butternut squash
5 carrots
Basil
Corriander
Black pepper
Cayenne pepper
Rosemary
3 garlic cloves
Method
Add all of the seasoning to a small bowl.
Finely chop the garlic and add to the bowl.
Add the fresh basil and coriander.
Wash the chicken using a lemon.
Stuff the seasoning inside the chicken.
Place the chicken in a large roasting dish and place in the oven at 170 degrees/gas mark 4 for 2 hours.
After basting and roasting, the chicken will be tender and juicy.
Ideally plate up generous portions with some vegetables.
