Strawberry & cottage cheese tart
The combination of strawberry and cottage cheese makes for a delicious and refreshing dessert. This recipe is easy to whip up with the kids and makes for a yummy treat after dinner.

5 sheets of filo pastry
Olive oil spray
400g cottage cheese
1/4 cup caster sugar
1/4 cup apricot jam
6-8 fresh strawberries
Grated rind of 1 lemon
Preheat oven to 220°C, lightly grease an oven proof dish. (I used a 22cm x 10 cm)
Spray each filo pastry sheet with olive oil spray and place into the prepared dish.
Layer another sheet of pastry over the first pastry sheet.
Repeat until all filo pastry sheets are layered.
Roll in the edges to neaten.
Bake for 5 minutes or until golden and crisp. Set aside to cool.
Meanwhile in a large bowl beat the cottage cheese, sugar and lemon rind together until smooth.
Spoon the cheese mixture over the pastry.
Wash and hull the strawberries and then cut into halves.
Place the strawberries on top of the tart. Arrange as you please.
Melt the apricot jam in the microwave for 5-8 seconds. Brush over the strawberries.
Refrigerate for 1 hour and serve cold.
