These muffins are a little slice of heaven. A delicious flavour for a muffin with fresh strawberries, a tasty treat in the middle (cream cheese) and a nice crumble on top. Perfection x

Strawberry & Cheesecake streusel muffins!
Preparation Time: 25 minutes
Cooking Time: 25 minutes
Makes: 12 servings
Ingredients
2 cups plain flour
1/2 cup caster sugar
2 tsp baking powder
1/2 tsp salt
1 egg
1/4 cup canola oil
1 cup milk
1 tsp vanilla extract
2 cups strawberries cut in to small pieces
Cream Cheese filling:
115g cream cheese
1/3 cup caster sugar
2 Tbsp beaten egg
1 tsp vanilla extract
Cinnamon Streusel:
1/4 cup plain flour
1/4 cup caster sugar
1 tsp cinnamon
3 Tbsp butter
Method
Preheat oven to 200 C and grease or line a 12 capacity muffin tin.
In a large bowl, sift flour, baking powder and salt together. Set aside. In another bowl beat the egg, milk, oil and sugar. Stir the wet ingredients in to your dry mixture gently but be careful not to over-mix. The mixture should be a bit lumpy.
Next you want to prepare your cream cheese filling by beating all ingredients together until smooth.
Prepare the topping by mixing the flour, cinnamon and caster sugar together and then rubbing the butter in until the mix resembles fine breadcrumbs.
Spoon a tablespoon of muffin mixture in to the bottom of each of the muffin holes. Sprinkle a few strawberries over and follow with a teaspoon of the cream cheese filling . Sprinkle with a little of the topping and then repeat with the muffin mix, followed by more strawberries and more streusel topping.
Bake for 20-25mins or until skewer inserted in to muffin comes out clean. Leave to cool in tin for 5mins before placing on wire rack to cool. Or if you can’t wait like me, enjoy one hot while the cream cheese melts in your mouth! ;)
