This has been one of simplest and delicious family dishes that we love since we were kids.
Just want to prepare some simple and tasty dishes after a long trip, so I bought a small box of char siu takeaway from a nearby Chinese restaurant and only a few ingredients from a supermarket.

Cooking Time: 5 minutes
Makes: 3-4 servings
Ingredients
15 medium to large sized fresh/frozen prawns, peeled, deveined, defrosted
1 cup char siu (or called BBQ pork), sliced and chopped into smaller pieces
3-4 big free range eggs, beaten lightly
1 tbsp olive oil
1 tsp chopped fresh spring onion, optional
Method
Rinse prawns properly. Wipe dry.
Heat 1/2 tbsp olive oil in a non-stick frypan over medium heat. Pan fry each side of prawns until just golden.
For the kids, it's not required to add more salt, since char siu is already quite salty.
Continue to stir fry until the prawns absorb some flavour and colour of char siu. Just in 1-2 minutes.
Add a bit more olive oil and give a quick stir.
Followed by pouring into beaten eggs.
Turn off heat. Use the remaining heat in the pan to toss gently all ingredients.
In such way, the prawns and char siu can be coated with some silky smooth scrambled eggs.
Transfer to serving plates or a big serving plate for sharing.
Sprinkle with chopped spring onion, but optional, since not all kids like the flavour of spring onion.
