Chicken and vegetables is a simple dish kids love; carrots and cabbage provide much needed colour, and chicken is a familiar favourite. So, get cooking and serve your little ones a meal they will enjoy.

Makes: 2 servings
Ingredients
3 Tblsp balsamic vinegar
2 chicken breast fillets
Tsp mixed herbs
Half tsp black pepper
Half a cabbage head
1 carrot
3 Tblsp olive oil

Method
Place the fillets in a saucepan just covering the fillets, add the seasoning, vinegar, and allow to simmer and reduce for 30 minutes.
Slice the cabbage and carrot.
Simmer the carrots in a saucepan of water for 10 minutes.
Rub the kale with the oil.
Remove the chicken from the saucepan - it will have become 'sticky' and sweet from the balsamic reduction.
Serve.
