Steamed rice cake is a traditional South Indian Breakfast. We call it 'puttu' in Kerala. During the jackfruit season, we make this rice cake with jackfruit.
The aroma of the steamed jackfruit is tempting. The jackfruit will become soft when cooked and can be mixed easily with the rice cake.

Makes: 2 servings
Ingredients
1 cup rice flour
10 jackfruit bulbs
1/2 cup grated coconut
Water approximately 1/2 cup
Salt to taste
Method
Remove seeds from the jackfruit bulbs and chop it.
Take a wide mixing bowl. Add rice flour, grated coconut and salt into the bowl.
Add a little water at a time and mix into the flour by gently rubbing with your fingers. When you press the flour mix with your fist, it should hold its shape. When you press it again, it should crumble. This is the right consistency. Stop adding water when you reach this stage.
Now add the chopped jackfruit into the flour mix. Stir just to coat the jackfruit with the flour. Keep it covered for 10 minutes.
Boil water in a steamer. Layer the steamer colander with the flour - jackfruit mix.
Cover and steam for 4 minutes on medium high flame.
Remove from heat. Move it into a plate and serve.
Don't expect to cut like a cake. This cake will be crumbly. Use a spoon to have this cake.
