Spicy vegan bean bowl
Whoever said vegan meant plain? Here's a spicy bowl of vegan friendly food.
: 20 minutes
: 3 kid servings
Half tin of tomatoes
Tblsp tomato puree
3 fresh basil leaves
50g red lentils
25g parmesan cheese
Tsp black pepper
2tblsp dessicated coconut
Pour the lentils into a small jar and add water. Soak overnight.
In the morning/after 8 hours they should have soaked up all the water and we considerably bigger.
Boil the lentils for 20 minutes, removing the foam as and when.
Finely chop the onion and garlic.
Fry the onion and garlic in a large frying pan with a glug of oil.
Season the lentils and add the coconut.
Add the tomato puree and chopped tomatoes.
Combine the onions, garlic and lentils and serve.
Add extra cumin for taste.
Serve with freshly chopped avocado and garnish with basil leaves and parmesan.
