Sourdough pizza with garlic and lemon thyme

A beautiful pizza dough that will start your pizza baking experience.

Preparation Time: For the dough (approximately 2.5 hours)
Cooking Time: 10-12 minutes
Makes: 4 servings

We have a starter in our household that has lasted years, thanks to my partner who is an avid baker. To be honest, I don’t concern myself with baking much as I am not into ‘measuring’ things exactly, but I do delight in watching the baking process and how it all comes together after hours of working on the dough. I don’t know what it is, but I just don’t have the patience for baking. I sometimes wish I did have the patience as I could do a lot more with my recipes. I prefer to cook dinners and lunches without all the methodical bits.

I mean, if you do the measurements wrong in a baking dish, the whole thing is wrecked and it is very difficult to fix it, whereas if you wreck something in a recipe, there are many ways to fix it.

To do a simple sourdough starter, follow this recipe and have your starter last for years to come:

1 cup sourdough starter (straight from the fridge)
˝ cup of hot tap water
2 ˝ cups of plain flour
1 tespoon of salt
˝ teaspoons of instant yeast
2 cloves of garlic
3 tablespoons of extra virgin olive oil
A small handful of lemon thyme
A small handful of mozzarella cheese


*Stir the liquids into the sourdough starter, and spoon 1 cup of starter into a mixing bowl.

*Add the hot water, flour, salt, yeast. Mix to combine, then knead till smooth and slightly sticky. Place the kneaded dough in a lightly greased container, and allow it to rise till it's just about doubled in bulk. This might take 2 to 4 hours; it might take more. For a faster rise, place the dough somewhere warm (or increase the yeast). To slow it down, put it somewhere cool.

Make a coarse paste of garlic and extra virgin olive oil.

Spread garlic and olive oil over the base.

Sprinkle the thyme over the base.

Add mozzarella cheese.

Bake in the oven on a pizza stone (if you have one) for 12 minutes or until you reach the desired base (I know that some people like their pizza extra doughy, whereas some people like their pizza’s light and crispy.) If you do have a pizza stone, then you are likely to achieve the crispy base after cooking this pizza base for 15 minutes.
