Soft and crispy banana slice

A great lunchbox filler, this slice is full of healthy fruit and grains and tastes great too! To vary the recipe try using crasins, dried apricots or dried pears in place of the fruit medley. You can replace the cinnamon with mixed spice too if you prefer. A very versatile and delicious slice.

Preparation Time: 15 minutes
Cooking Time: 30 - 40 minutes
Makes: 12 servings approx.

Ingredients

Base:

1 1/3 cups plain flour
1/3 cup corn flour
1 1/2 tsps baking powder
1/3 cup caster sugar
1 tsp vanilla essence
1/2 cup olive oil
2 eggs
3 ripe bananas (mashed)

Top:
Cinnamon
1 cup puffed rice
1/2 cup rolled oats
1/2 cup dried fruit medley
Honey

Method
For the base:

Combine the dry ingredients in a large bowl. If you donít want to use the corn flour simply replace with the same amount of plain flour.



In another bowl combine the wet ingredients, including the mashed banana. Add the banana mixture to the dry ingredients and stir until well combined.





Pour the mixture into a lined baking tray (or sponge roll pan if you happen to have one)



For the top:

In a small bowl combine all the ingredients except the cinnamon and honey.



Sprinkle the cinnamon over the top of the base mixture so that it is lightly covered.

Sprinkle the grain mixture over the top of the base, making sure that the topping is evenly spread. Press very lightly with the palm of your hand.



Preheat the oven to 160 degrees C.

Drizzle a generous amount of honey over the top of the slice and put in the oven for 30 minutes or until the top springs back when gently pressed.

Allow the slice to cool in the tin for ten minutes. Remove from tin and allow to cool completely
