A noodle and vegetable delight. Perfect for a main meal or a side dish.
Soba noodles are versatile, healthy and delicious. A nice blend of colourful vegetables with the noodles makes this meal nutritious, not to mention quick to put together. Use any vegetables you like, but the key flavours are garlic, onion, lemongrass and chilli. I used a very mild chilli which the kids didn't even notice, but you don't have to put the chilli in if you don't want to, the rest of the flavours will make this dish tasty anyway.
Serve up with meat, chorizo sausage or fish and side salads. A perfect meal when you are in a rush.
Ingredients 2 carrots
1 yellow capsicum
1 red onion
1 mild red chilli
1 to 2 cloves of garlic
1 sprig of lemongrass
1 medium mild red chilli
2 tablespoons of soy sauce
1 tablespoon of oyster sauce
1 tablespoon of sweet chilli sauce
Finely dice the lemongrass, garlic, chilli and red onion.
Fry your diced ingredients on some olive oil.
Dice the carrots and zucchini.
Dice the yellow capsicum.
Add the carrots, zucchini and capsicum to the rest of the ingredients.
Prepare your soba noodles.
Cook the noodles for 5 minutes in boiling water and drain well.
Add the noodles to the vegetables and stir through well. Add the oyster sauce and the soy sauce.
