This is a simple recipe made with wholemeal flour instead of white flour, and topped with crispy bacon, egg and maple syrup.
I have put smarties into the pancake mixture to make them more attractive to children!
Preparation Time: 25 minutes

Makes: 3 servings
Ingredients
1 cup milk
1 cup wholemeal flour
1 tbsp vinegar
2 tsp sugar
¼ tsp baking soda
½ tsp baking powder
1 egg
Bit of salt
2 tbsp melted butter
Extra for the pan
Tomatoes (optional)
Bacon
3 eggs
Maple syrup
Method
Put the bacon in a frypan and cook to your liking - I like it crispy.
I also cooked some mini roma tomatoes which I have growing in my vegetable garden.
Mix the milk and vinegar and it should curdle.
Mix together the flour, sugar, baking soda and powder, and salt.
Whisk the egg, and the melted butter.
Add the egg mixture to the curdled milk mixture and then put it into the dry ingredients, and stir.
Do not stir a lot but just stir so there is no visible flour -it should be lumpy.
Heat a small frypan and add a bit of butter. Add scoops of the pancake batter and smooth out to a thin, flatter pancake.
Add as few or as many Smarties as you want.
Cook for a few minutes, turn and cook for another minute or two until it has started to go brown underneath.
Fry the tomato and egg -I had one child who didn't want the egg but just a piece of bacon and maple syrup.
Serve with a bit of butter, the bacon, an egg and topped with maple syrup.
