Getting little ones to eat anything labelled as 'vegan' can be tough. After trying to present vegetables in every different kind of way I've found an easier (and maybe tastier), alternative: potatoes. They are a familiar favourite, and with little effort are a delicious introduction into the vegan way of life.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 servings
Ingredients
500g new potatoes
3 tblsp extra virgin olive oil
Pinch of salt (optional)
Half tsp ground black pepper
3 Fresh bay leaves
Method
Wash the potatoes thoroughly.
Prick the potatoes and place in a steamer/ boil for 20 minutes.
Place the potatoes in a bowl. And douse in the dressing.
Feel free to go heavy with the pepper, it makes these fluffy potatoes delicious!
