Potatoes are easiest to serve as a main or exciting side dish, and throwing a number of ingredients on top makes it an easy and tasty dish.

Makes: 4 servings
Ingredients
5 potatoes
2 small sweet potatoes
broccoli head
3 spring onion
Tblsp coconut oil
Fresh thyme, rosemary and tsp of paprika
Goats cheese
Tblsp olive oil
Handful of baby spinach
Half tsp cracked black pepper
Method
Wash and prick the potatoes and place in the oven for 1 hour at 180 degrees.
Chop the onions, and separate the florets from the broccoli and place in a frying pan with the oil and herbs.
Add the spinach for the final 2 minutes because it wilts quickly.
Remove the potatoes from the oven, halve and top with half of the cheddar first - so it melts in to the potatoes - then add the onions, broccoli, spinach, then top with the goats cheese.
Garnish with the black pepper and olive oil.
