Seasoned tomato side dish

Cooked tomatoes are a powerhouse of nutrients and once they've been roasted/fried or simmered down, their anti-cancer properties increase as does their lycopene potency. With that in mind, why not whip up this tomato side dish, made up of a variety of tomatoes - perfect for a summer lunch.



Preparation Time: 2 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
3 varieties of tomatoes
Glug of olive oil
Handful of thyme
Handful rosemary leaves
Pinch of salt



Method
Roughly chop the tomatoes.



Add to the frying pan with the oil and herbs,



Cook for 10 minutes over a low heat, turning every 2 minutes.

Once cooked serve, or, if you're making this in preparation for the next day, store in a jar.



Enjoy.
