Scrambled Eggs with Sweet Corn and Spring Onion

A fresh and easy breakfast dish that will keep the kids full for a long time.



If you want to treat your kids to a wholesome and fun breakfast why not put a spin on the traditional scrambled eggs. Instead of using cream and all the rich stuff, why not just add a little bit of sweet onion and sweet corn; the kids will love it. Serve it up on toast with some sauce or on a crumpet, the ideas are endless.

If you are not a very big fan of scrambled eggs in general, then you can experiment with this dish by adding some other ingredients like, zucchini, peas, bacon or ham. Eggs are just one of those foods that bind everything together, so this dish is a perfect breakfast or light lunch idea.

You can also use the eggs as a sandwich filling or a meal on its own alongside meat.

The cooking time is next to nothing and the preparation time is amazingly quick and easy. The flavours of this dish come from the sweetness of the ingredients such as corn and spring onions. The flavours are subtle and gentle on the stomach. If your kids don't like the onion, then just use the corn and maybe add a few peas to introduce the flavours and textures to them.

This is also a dish that you can get the kids making with you because it is so quick and easy. They will get involved and have fun doing it, whilst experimenting with different ingredients and the goodness of eggs never fails.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 4 servings

Ingredients
5-6 eggs
1 Spring onion or half a red onion
200g of sweet corn
Parsley to season
Salt and pepper

Method

Place the raw eggs in a bowl and scramble.



Fry up the onion until transparent.



Add the eggs to the onion and scramble together until egg is slightly cooked.



Add the corn and stir together making sure you don't burn the eggs. Add salt and pepper.



After you have stirred it together, turn the heat off and add the parsley.
