Scrambled eggs with salmon

A nutritious and healthy breakfast beaming with omega 3 and protein.



Salmon is nature's wonder-fish; full of omega 3 and good oils that increase joint mobility along with being good for our overall health, many of us don't eat enough of it.

This recipe is really simple and nutritious for a good wholesome breakfast or even lunch. I used left over salmon that I had baked, but you can use canned salmon or even smoked salmon. If you are using smoked salmon, you don't need to cook it as much, but you can use it more like a garnish that you place over your cooked eggs in slices. Salmon is my favourite fish and I cook it often. Smoked salmon is great for sandwiches and to accompany finger foods.

If you want to make this dish healthier, don't use cream or top with cheese, but rather, sprinkle some parsley or herbs of your choice over the eggs like a garnish. Serve with some salad and you have a lovely meal that tastes great and keeps you full for a while.

Preparation Time: 2 minutes
Cooking Time: 5 minutes
Makes: 3 servings

Ingredients
5 eggs
A handful of leftover baked salmon fillet, canned salmon or smoked salmon.
Salt and pepper
Cheese (optional)
A handful of parsley

Method
Scramble your eggs in a bowl.



On olive oil, fry up your salmon and some parsley until heated through.



Add the eggs and scramble in the pan until combined with the salmon. At this point you can add some cream if you wish.



Add salt and pepper and stir through. Garnish with some more fresh parsley.

Serve up with some toast or sides of your choice. You might like to sprinkle some cheese on top.
