Salmon is the only fish my nephew enjoys. Thus, I thought I'd treat him to a healthy meal when I was babysitting for my sister.
My salmon bake looks impressive, but it is so easy to throw together, not to mention delicious.
Preparation Time: 5 minutes
Cooking Time: 40 minutes
Makes: 2 adults/4 child servings
Ingredients
Half a zucchini
Tbslp z'atar (available in most supermarkets)
Sprigs of thyme
4 salmon fillets
1 sweet potato (between two kids)
Method
Prick the sweet potato and place in the oven for 45 minutes at 160 degrees/gas mark 3.
Cover abaking tray with foil and set aside.
Wash and grate half of the courgette into a bowl.
Season the salmon fillets.
Equally spread the grated courgette on top of two fillets.
Top the seasoned fillets with the other fillets (it acts like a lid) and place in the oven for the remaining 30 minutes. Do not adjust the heat settings.
Wash the salad leaves and dress with the vinegar, black pepper and lemon juice.
Remove the salmon and sweet potato from the oven.
