This is a fantastic sugar-free alternative to a banana loaf that is usually loaded with ingredients like sugar, flour and dairy, which can irritate little ones tummies.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 8 servings
Ingredients
4 black/very ripe bananas
150g oatbran
Tsp bicarbonate of soda
1 egg
Tsp ground cinnamon
Peanut butter (optional)
Method
Mash the bananas in a bowl and add the cinammon.
Add the oatbran and combine. It will look a little lumpy, don't worry.
It doesn't look pretty, but once everything is mixed together and relatively smooth pour into a greased baking tray. Place in the oven for 20 minutes at 150 degrees.
Remove from the oven and break into loaf slices.
For a nice treat, slather on some peanut butter, it works so well with the banana-y, oaty slices.
This makes an ideal snack, healthy dessert and a suitable treat for little ones if you're trying to keep their diets sugar-free.
