Poached eggs are an easy and healthy way of ensuring little ones are eating enough protein needed to help them grow. Poached eggs atop steamed veggies doesn't get any healthier either.

Makes: 1 serving
Ingredients
1 egg
2 carrots
Handful of green kale
2 tblsp olive oil
Tsp balsamic vinegar
1 rosemary sprig
Pinch of black pepper (optional)
Pinch of sea salt (optional)
Method
Crack the egg into a simmering saucepan of water.
Place the vegetables in a sieve on top of the pan and cover with a lid for 2 minutes.
Add the vegetables to a bowl.
Top the bowl with the poached egg.
Top with remaining ingredients, serve and enjoy.
