If you like stews then this dish is a quick and easy dish that is packed with vegetables and delicious flavours. You can use pork or veal mince, even chicken or turkey; just substitute the beef stock with chicken stock. The stew is hearty and rich and will more than satisfy hungry mouths. Add any vegetables you like as long as they are finely diced. The vegetables thicken the sauce, whilst the meat and purée create a rich, thick consistency.

Makes: 8 or more dinner servings
Ingredients 1kg of beef mince
2 large onions
1 large zucchini
2 cloves of garlic
250g of peas
2 tablespoons of beef stock
1.5 litres of tomato purée
Gnocchi or rice to serve
Fry up onion and garlic on extra virgin olive oil.
In a food processor blend the rest of the vegetables.
Fry up vegetables with onion and garlic.
Add beef mince and cook until slightly grey in colour.
Add the beef stock, tomato puree and peas. Stir together and cook for 20 minutes.
Serve up with gnocchi and Parmesan cheese or mashed potatoes, or even rice.
