Red Gurnard and Christmas Spinach

A side dish is the easy way out when you're tentative about new flavours. When cooking for your kids it can be hard enough to get them to eat the right food, never mind enjoy enjoy whatever experimental dish you've whipped up in the kitchen. With that in mind, I created a delicious fish meal, with Christmas spices on the side.



It is an absolute breeze to whip up this dish because it only contains two ingredients, save for the seasoning. I would never have thought I could make a festive meal with the minimum ingredients, and have my niece and nephew enjoy it. Job well done.

Preparation Time: 4 minutes
Cooking Time: 1 hour 15 minutes
Makes: 2 kid servings

Ingredients
1 red gurnard fillet
5 tblsp Olive oil
200g spinach
Half tsp cinnamon
Half tsp nutmeg
Tsp butter
Half tsp black pepper

Method
Fry the fish in a frying pan for 5 minutes over a low heat.



Transfer to an oven dish, add the oil and seasoning and place in the oven for 1 hour at 160degrees/gas mark 3.



Wash the spinach and place in a frying pan with the butter



Add the spices.



Remove the fish from the oven.



Plate by halving the fish and removing the meaty chunks from the fillet and serving alongside the buttery and spiced spinach.
