Raw milk is the healthiest most natural milk you can buy. Unpasteurised it is the safest dairy product you can buy for your son or daughter.
I have made raw milk yogurt for my niece and nephew when they visited recently, and they loved it.
Preparation Time: 8 hours
Cooking Time: 1 minute
Makes: 1 500g jar
Ingredients
1 pint of raw milk
Tblsp yogurt
Muslin cloth

Required ingredients
Method
Pour the milk into a saucepan.
Heat to 110 degrees - you'll need a thermometer for this, any higher than 115 degrees and you've kind of ruined the milk, so test it!
Once it has reached optimum temperature remove from the heat and stir in the yogurt.
Place a lid on top and leave in a warm place for at least 8 hours.
You should end up with a creamy white saucepan of whey and globules of what appears like yogurt.
Strain the fermented yogurt through a muslin cloth - I hang my muslin cloth/suspend it in some way.
Pour the whey and fermented globs of yogurt through a cloth and leave for 3 hours.
After three hours you should have a thick yogurt result. It may be slightly creamy in colour, that's because it's raw.
Scrape the yogurt from the cloth and into a suitable receptacle, either a Mason jar or empty yogurt tub.
Refrigerate and consume within 1 week.
