An easy way to use up 'gone-off' avocados is this, quick, nutritious, salt and sugar-free creamy dip.
Preparation Time: 1 minute
Makes: 3 servings
Ingredients An overripe avocado
Handful sorrel leaves
Half a courgette
5 tbsp olive oil
5 tbsp hemp oil
Pinch of black pepper
Half tsp chilli flakes
Wash the courgette and sorrel and slice to roughly the same size.
Add all of the ingredients to a blender and whizz on high, adding the oil bit by bit.
Leave to blitz for at least 2 minutes - it should be completely smooth.
Pour into a suitable receptacle.
Season with the chilli flakes and serve.
This is perfect as a topping for toast, or as a dip with flatbread, or a thick dressing for salad. Just call it the sugar and salt-free vegan wonder-dip! Have fun using this in as many ways as possible.
