Kids get bored easily, very easily and especially when it comes to their packed lunches for school. A good alternative to sandwiches now and then is bread. When I say bread, I mean the cake-like quick bread that you can bake the night before, ready to be packed into lunchboxes the next morning. You can always adjust the amount of sugar to make it extra healthy!

Makes: 4 servings
Ingredients
75g unsalted butter, softened
1/2 cup brown sugar
1 egg, lightly beaten
1 ripe banana
1 cup plain flour
1 tsp baking soda
½ tsp baking powder
¼ cup milk
¼ cup frozen raspberries
Method
Preheat oven to 180°C, grease and line a loaf pan or use a silicone pan.
Beat together the butter and sugar until pale.
Add in the egg and beat well to combine.
Mash the bananas and stir into the mixture.
Sift in the flour, baking powder and soda.
Add the milk and stir to combine.
Pour into the prepared pan.
Bake for 45 minutes or until golden brown and a skewer inserted comes out clean.
Serve warm with extra butter if preferred.
