A delicious and healthy salad that bursts with flavour in your mouth.
You can make any salad delicious, if you have the right dressing. I have recently come upon a honey caramelised balsamic that makes any salad sweet and delicious. It is perfectly kid friendly as the salad tastes more like a dessert than a salad. It is the perfect way to get your kids to eat more vegetables and fruit. The dressing is more like a topping which is served alongside seasonal cherry tomatoes which burst in your mouth. The caramelised dressing is one of those dressings that is a must in any pantry as it can turn any salad into a delicious, sweet delight.

Makes: 4 servings of salad or sidedish
Ingredients 1 can (400g) of red kidney beans
300g of mixed cherry tomatoes (yellow and red)
Half a red onion sliced finely
A handful of parsley
2 tablespoons of caramelised balsamic vinegar
1 tablespoon of balsamic vinegar
Salt and pepper to taste
Drain a can of red kidney beans into a bowl.
Slice up red and yellow cherry tomatoes and add to the beans.
Finely slice the red onion and add to the salad.
Add the finely chopped parsley.
Season with the two types of balsamic vinegar and stir together. Add some salt and pepper to taste.
