A quick and easy peanut butter biscuit for when the cookie jar is suddenly (and mysteriously) empty! With just a handful of ingredients, these cookies are easy to whip up in a snap.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 24 servings

Ingredients
1/4 cup plain flour
1 cup peanut butter
1/2 cup caster sugar
1 egg
Pinch of salt

Method
Preheat the oven to 180 degrees C. Line or lightly grease baking trays.

Place the caster sugar, egg, peanut butter, and salt into a mixing bowl and beat with an electric mixer until creamy.

Sift the plain flour into the mixing bowl, then use a wooden spoon to stir the ingredients until just combined.

Roll 1-2 teaspoons worth of peanut butter cookie dough into small balls with your hands. Add a light extra coating of plain flour to each cookie ball, then remove the excess flour by lightly rolling each lump of cookie dough in your hand. This extra, light flour coating will help the cookies keep their shape and reduce spreading slightly.

Place each dough ball onto your prepared baking trays. Flatten each slightly with your hand.

Bake for 10-15 minutes, or until cooked through.
